I am being very house-wifey this week...LOL. This is what I made for supper yesterday, and it is SOOO GOOD!
First, you need to chop up a large onion. Then you need to brown it with 1 1/2 pounds of lean hamburger. Mine looks like a lot more, since I am making a double batch (the recipe, though, is for a single).
While, that is browning, chop up 3 stalks of celery and 4 big carrots. Make sure to keep checking your hamburger. Now you need to open up 1 can of tomato soup, 2 cans consomme, and 1 large can diced tomatoes (28oz).
After all the meat is browned, add everything in the tins, the veggies and 2 cups of water. Now it is time for the seasoning ; 1 tablespoon parsley, 1 bay leaf, and pepper to taste. The final ingredient is 8 tablespoons of pot barley. Bring it all to a boil, turn down and let simmer for 2 - 4 hours.
All you need to serve with this soup is a fresh loaf of homemade bread ... mmm, mmm, good! This is a perfect comfort meal, and will serve a family of 6. I often make a double batch, and then can the extras to save for a quick meal another day.

I made this soup last night and it is Y-U-M-M-Y yummy!! Sometimes I'll try a new recipe and my DH will say "It was OK but you don't have to make it again." (Never complains or refuses to eat it the first time -- he really is a dear DH!) This one got an enthusiastic "That's a keeper recipe!"

This has been a family recipe of mine that I have passed on many times and I live in Australia. It is a lovely sou. Highly recommended. In Australia we call pot barley pearl barley.

I googled Pot Barley and found it was the same as Scotch Barley or Milled Barley. Can't wait to try this yummy soup.

Wow -- you got me thinking -- you can this? I mean, I have never canned anything with meat in it... but I have had canned salmon from family members in Alaska...
So, you just put the hot soup into jars and process in a hot water bath? Does it keep in the pantry without refrigeration? Hmmm... I have all of these canning jars, and yet I have been freezing mine...

This is my favorite soup....love it ! I also add a can of crushed tomotoes to mine because I love the thickness it adds to the soup. My favorite thing to do with this soup is to add chunks of cheddar cheese just before serving so that they are melted and stringy when you eat ! So good.
