For supper?? I have been experimenting with an AWESOME salad, and yesterday, I think I found my favorite version!! This is what it looks like, they say it has to look good too.
- 1 large tomatoe
- 1 large orange pepper
- 1/2 of large red onion
- 1/2 of long english cucumber
- 1/3 cup Zesty Italian dressing
- 1/3 cup Greek with Feta and Oregano dressing (secret ingredient)
- 3/4 cup 4 cheese Italiano shredded cheese (blend of parmesean, mozza, provolone, and emmental cheeses)
Chop all vegetables into bite size pieces, and put into large bowl. Pour in the dressings and add the cheese. Mix together and let marinate for 1/2 to 1 hour before serving.
You can use 2/3 cup Zesty Italian, if you don't have the Greek. I just really like the extra flavour that the Greek dressing gives it. I love the bright summery colors in this salad. I think I see a color combo coming on ... hehehe.

Ummmmm, this looks yummy! I'll have to wait till DH is gone since he doesn't like peppers OR cucumbers.
BTW, what is Italialiano cheese? If you can put my in the ballpark with the cheese I'm sure I can find it or something similar.

This looks very good!! Maybe I'll try making it this weekend. Although there isn't much that I hat to do more than cut up vegetables!!

So this is SO similar to a "Greek Salad" as they call it in Greece. We had quite a few on a trip there. It's just quartered or eighthed? tomatoes, cucumber, strong olives, onions, green peppers, a little olive oil, and a block of feta cheese on top. So refreshing! NO LETTUCE. It is wonderful. Tried getting one in the states...they always add lettuce and it's not the same.
