Thanks for this lovely card, Dale Anne, it will be going to the family right away. I just talked to the mother, and she is making a gorgeous scrapbook of all the cards sent, so that they will be able to go through them whenever the daughter-in-law is down to raise her spirits. Thanks to all who contributed a card.
Now a recipe for you. Yes, I am going to give you the corn and coleslaw recipes, but that is not which one this is.
PREHEAT oven to 350F, and lightly grease a large bundt pan. Beat cake mix, dry pudding mix, eggs, sour cream, oil and water in a bowl until just moistened. Scrape sides of bowl and beat on medium speed about 2 mins or until well blended. Stir in mini chocolate chips and the chopped candy canes. BAKE for 50 mins. to hour or until a wooden toothpick inserted in the center comes out clean. Cool on wire rack about ten minutes, and then invert cake onto rack to cool completely. Topping Whip the cream until soft peaks form, then add the vanilla pudding and sugar. Continue beating till stiff. Put the cake on a serving tray, spread the whipped cream and sprinkle with the chopped candy cane. There should be enough whipped cream left over that you can add more to the slices when cut. Refrigerate till ready to serve. Hope you enjoy this cake, my company LOVED it. Have fun and happy celebrating!!
